Hi! I’m Erin.
I’m a wellness coach, mentor and the founder of Low Carb High Party. I call myself a Balanced Life Stylist because I live a lifestyle focused on finding the balance between living a healthy life and still living your life.
I was born in Sweet Home Alabama. I spent most of my formative years in Tampa, Florida and am now living in its neighboring city of St. Petersburg, Florida. I met the love of my life in law school in 2005 and we’ve been together ever since. We recently tied the knot in December 2015. We are the proud parents to a spoiled rotten French Bulldog.
I love to feel like I have it all together.
It’s not enough to just survive, I want to thrive!
I love high quality, special food and cocktails. I enjoy going out on the town, trying new restaurants and bars and travel that is focused on food and drink. I love the challenge of making that fit in my healthy lifestyle. I think I’ve gotten pretty darn good at it over the years.
I started Low Carb High Party as a love letter to food, fitness and fun. At its inception, I was strictly following a low carb diet and making low carb cocktails in an effort to solve my own problem, get a handle on my own health and get to a place where I felt physically good in my own skin.
I’ve always been dedicated to making health and wellness work in the real world while living a social lifestyle. That is a difficult goal to attain and one that I have struggled with through the years. But when I found Beachbody and the 21 Day Fix program something clicked. All of these ingredients came together into the most successful and delicious recipe of my life:
• Self love
• A simple nutrition plan
• An effective and efficient exercise program
• Nourishing superfoods
I’ve lost 20 pounds, found my passion, and learned to love myself. I finally feel confident in my own skin! And best of all I’ve discovered an incredible community of support that has helped me to grow into the woman I am today and push myself to keep growing.
Now more than ever I am a firm believer in the
health – life balance.
I’m not a workout fanatic, but I do like it and do enough of it to accomplish my goals. I’m not the nutrition police but I am both knowledgeable and sensible about food. I can make good choices anywhere – going out or cooking at home. I indulge strategically and subscribe to the work smarter-not-harder philosophy.
I am passionate about helping people, like me, who want to live a healthier lifestyle but still have a life. I am passionate about helping people do that in a way that doesn’t destroy their relationships, doesn’t destroy their balance or their ability to have fun and enjoy life. I’m so passionate about this because I was there once. I believe that to be an expert you have to have overcome something that was once a huge challenge to you personally. And I’ve finally done it.
That makes me the Low Carb High Party expert.
This blog chronicles my journey transforming myself from the inside out and helping others to do the same.
What fills my days is what you will find here, a little slice of the Low Carb High Party lifestyle. I get to spend my days working on my own health, coaching others to success in their health and mentoring new coaches on how to be successful in this business. I hope you’ll follow along and join the party!

10 Things you probably didn’t need to know about me:
I can’t swim underwater without holding my nose. As a Floridian living on the water, this is a shameful and sad state of affairs. I’m going to have to work on that.
Before changing to a paleo diet my #1 favorite food was peanut butter and my #2 favorite food was cheese. Saying goodbye to them was easier than I imagined. I still see them sometimes over in the 20% of my 80/20 life.
I can do a mean cover of Bon Jovi’s Wanted Dead or Alive at karaoke.
My husband and I had our furbaby’s name (Rufus) picked out at least a year before finally pulling the trigger and getting the French Bulldog of our dreams.
I’ve never been fired from a job but have gladly quit the following positions: clothing retail at the mall, coffee barrista, college newspaper reporter, waitress, attorney, photographer, day trader.
I used the rusty Spanish skills I learned in high school and college to do all of the talking on our “weddingmoon”/elopement to Buenos Aires, Argentina. It sounded a lot like this: “Mas Malbec, por favor.”
I’m generally not very competitive, except on Tuesdays for our kickball-followed-by-trivia team. Go Kick In A Box!
I made it all the way through college without drinking beer or water. I didn’t like the taste of either. I have since acquired the taste for both. But I’m quite picky.
I can recite nearly every line of the following movies: Dumb and Dumber, Grease, Super Troopers, Annie, Jay & Silent Bob Strike Back, Billy Madison.
As a natural redhead I feel a strong connection with and look up to the following awesome fellow gingers: Bobby Flay, Gillian Anderson, The Pioneer Woman Ree Drummond, Gretchen Rubin & Amy Adams.
